A full day in Furnas, the volcanic valley on the east side of São Miguel, with a local guide and no more than eight people in the group. The cozido is the reason many people book it. The stew is buried in holes dug into volcanic soil and cooked by the ground itself for six to seven hours. If you took the lunch option, that is what you eat. Vegetarian and vegan versions are cooked the same way, underground, which is not something most operators arrange. Gorreana comes earlier in the day: a tea factory and plantation producing one of the last fully natural teas left in the world, with a tasting and the rows of tea running down the valley. Ribeira dos Caldeirões was a valley of watermills and is now a natural park, with waterfalls through it and a craft shop selling dolls made from corn leaves by a method that predates all of this. In Furnas itself, the ground steams. Hot springs and fumaroles come up through the village, and several mineral waters can be tasted, each one different from the next. At Furnas Lake, the neo-Gothic chapel of Nossa Senhora das Vitórias stands with wooden sculptures around the shore. The volcanic park where the cozido is buried can be visited as an option, with a €3 entrance fee that is not included. Cancel at least 24 hours before departure for a full refund.

An easy square to find in the upper town, with a church behind it.

  1. Miradouro de Santa Iria

From this viewpoint the north coast of São Miguel runs from Sete Cidades to Nordeste, with dark cliffs marking the edge of the Atlantic.

  2. A stop at the Gorreana Tea Factory offers a relaxing moment…

The Gorreana tea factory produces one of the last fully natural teas still made anywhere, and there is a tasting. The plantation rolls down the valley around it, which is most of the reason people stop.

  3. Parque Natural da Ribeira dos Caldeiroes

A valley of old watermills, now a natural park with waterfalls through it, and among the best looking corners of the Nordeste. The local craft shop sells corn leaf dolls, made by hand with methods passed down.

  4. The unique gastronomy of the region is always a highlight…

This is where the Furnas stew is eaten. Cozido das Furnas cooks for six to seven hours in holes dug into the volcanic soil, and it is the dish the Azores is known for. A fully plant-based version is prepared the same way, underground, for vegetarian and vegan guests.

  5. Furnas

Furnas village sits in what people here call the Enchanted Valley. Hot springs and fumaroles come up through the ground around it, and several natural mineral waters can be tasted, each with its own character.

  6. Lagoa das Furnas

Furnas Lake, with the chapel of Nossa Senhora das Vitórias, a rare piece of neo-Gothic here. Wooden sculptures stand around the shore and make the walk worth the time.

  7. Caldeira das Furnas

Optional: the volcanic park by Furnas Lake where the cozido is buried, and a walk among steaming mud pools and boiling springs. Entrance is €3 per person and is not included.
