Three Wineries, a Tomato Factory and a Front Table at Santo

Three wineries, chosen for what is in the bottle rather than for how many coaches they can park. Gaia sits on a beach, in a building put up in the early 1900s as a tomato factory and later turned into a winery. Gavalas is a family estate now in its fourth generation, still working the volcanic soil. At both, the walk goes out into the vineyard, where the guide explains the basket vines: Santorini trains its plants into low woven baskets, and no other wine region does it that way. The last stop is Santo Wines, with a table reserved in the front row for the sunset over the caldera. There is a walk through the cellars, an explanation of how the wine is made, bottled and aged, and plates of local cheese and Greek dishes to go with the glass. The booking is private.
